VEGETABLE KURMA

VEGETABLE KURMA

Ingredients:
Vegetables-(carrot,beans,peas,potato,cauliflower,mushroom)

Onion-1(Big)

Tomato-1(Big)

Green chilies-3

Grated coconut-1 cup

cashews-8

Turmeric powder-1 pinch

Coriander powder-2 Tbsp

Red chilly powder-1 tsp

cloves-2

cinnamon-1 big piece

cardamom-1

star-2

bay leaves-1

Ginger garlic paste-1 tbsp


Method:

To grind:
Coconut, fennel seeds, cashews and green chilies- Grind all to fine smooth paste

Method:

1.Heat oil in a pan and fry all the spices( cloves, cardamom, cinnamon, bay leaves and star ).

2. Put the cut onions and fry until it becomes transparent. Add ginger garlic paste and fry it till the raw smell goes.

3. Add the cut tomatoes and saute it. Now add turmeric powder, coriander powder and red chilly powder one by one.

4. Add the ground paste and mix it well. Then add all the cut vegetables and mix it well with the gravy. Put salt as per taste.

5. Add 1 cup of water and cover the lid. Cook it until all the vegetables are cooked.

6.Add 3 tsp of coconut milk to the gravy when its boiling. It takes about half and hr to cook . Don’t over cook the vegetables.

7.Garnish it with cilantro and serve hot with parotta,dosai,idly,chapathi,idiyappam,etc.
