Sago(javarisi) Payasam/Kheer


Sago (Javarisi) Payasam/Kheer:

Ingredients:

Sago /javarisi-1cup
Milk -3 cups
Sugar-1 cup
Ghee-3 tsp
Cashew nuts-20
Cardomom-2
Dry fruits/sultanas-20
Almonds(optional)
Saffron strands -4 to 5(optional)


Method:

1.Fry the sago in a pan until the white balls become pure white in colour. This takes 5 min to come to that stage.
2.Boil 2 cups of water in a pan and add sago to it and gently stir at regular intervals.
When the sago is fully boiled, add 3 cups of milk to it and add cardamom and stir at regular intervals.
3.Then add 1 cup of sugar and stir regularly, dissolve the saffron strands in a small cup of milk and add it to the pan .Allow it to cook and get an pale yellow colour.
4.Then fry cashews and sultanas in ghee and add to the pan .
5.This Kheer tastes good when served hot or cold.

Note :For rich taste add 1 cup of milkmaid instead of milk.
